One might find the trip to VUE Bar & Grill filled with many preoccupations. The not-so-short elevator ride up to the 19th floor of the OUE Bayfront building, and then an additional walk down a corridor lined with a wine cellar, provides plenty of time to question: would the views be as good as all the pictures on social media? It should be, since it is, after all, the restaurant’s name (Vue is French for view). All those thoughts, however, would dissipate the moment the host shows one’s table.
Set in a lofty dining space with a grandeur further emphasised by the arched ceilings, every seat here is a front-row access to Singapore’s glitzy Marina Bay, blissful by day and romantic after sundown. Copper ceilings add a touch of moodiness, setting the tone for something between posh elegance and a laid-back, casual drop-in.
Not ready for a full meal quite yet? Step out into the alfresco wine bar, positioning guests closer to the panorama. Here’s where diners can sample one of the 1,000 bottles they passed in the hallway on the way in, start with a smorgasbord of charcuterie and cheese, nibble on light bites like the Beef Tartare Tartlet and Salmon Crudo, or sip on signature spritz cocktails like Northern Mist, a concoction of Reyka vodka, St. Germain elderflower liqueur, hibiscus syrup, cranberry juice, and soda.
By dinnertime, the restaurant reveals itself as something more than just aesthetics. The kitchen, led by Executive Chef Sam Chin, has much in store for the taste buds. Creamy risottos are paired with selections like wild forest mushroom, foie gras, Japanese urchin, and a seafood medley spanning blue lobster, Hokkaido sea urchin, scallop tataki, and Osetra caviar. Not to be missed are the hearty mains, boasting premium beef cuts that range from Australian Stone Axe Wagyu and A5 Kumamoto Wagyu to 60 Days Butter-Aged USDA Filet Mignon.
