It’s not uncommon in Bali for restaurants to emphasise their oceanic nature, finding its home along picturesque coasts or atop majestic cliffs that overlook the glittering, frothy oceans. The highly esteemed Koral Restaurant takes a different approach, true to the grandiose nature of The Apurva Kempinski Bali where it’s located. The restaurant turns the sea from a backdrop to its atmospheric setting, placing its dining quarters underwater inside an aquarium, the first of its kind on the island.

It’s the very thing diners would notice first upon descending the stairs, leaving behind the resort’s sunlit palatial courtyards for an ambient space rippling with shades of aquamarine. Through the glass panes that stretch walls and overhead domes, guests can witness a kaleidoscope of colours as schools of fish flit to and fro, manta rays gliding regally, and the occasional appearance of divers. The juxtaposition is a warm teak ceiling, red clay brick walls, and black and white tegel tiles, fostering a character brimming with elegance and sophistication.

Still, dining here doesn’t hide behind the grandeur of its aquatic setup. The menu is equally informed by the ocean, led by a selection of seafood, acting as an extension of the aquarium. Each dish is a testament to the culinary team, spearheaded by Executive Chef Jonas Noël who brings over 20 years of experience in MICHELIN-starred kitchens. Completed by a hypnotic soundtrack that emulates undulating waves, dining is in itself a sensorial experience.

Inspired by the flavours of Indonesia’s coastal regions, the menu champions locally sourced ingredients. Dishes such as Kalimantan Blue Crab with Oscietra caviar and apple and Hokkaido scallop with fregola sarda and clams reflect a dialogue between Indonesian coastal flavours and European technique. Further courses celebrate the archipelago’s bounty: Sumbawa octopus tentacle layered with smoked aubergine and pine nut, Madura line-caught fish with coconut and kaffir leaf. The star, however, is the Papua bamboo lobster with shellfish jus, an immaculate showcase of locavorism, depth of flavour, and technical precision. Each meal can even be taken a step further with a curated wine pairing from one of Asia’s leading and most distinctive wine programmes, helmed by an award-winning sommelier.

The experience concludes on a distinctly local note, with Harum Manis mango and Mount Batukaru coffee crafted into otherworldly desserts. In addition to its relaxed dining, Koral Restaurant offers an appealing selection of artisanal drinks from the bar and cocktail cart.
